Foxglove Farm

 Joe Monaghan began his coffee career working a summer job in Coupeville with some friends who would go on to start Seattle’s Best coffee in the early 70s. Throughout his career selling coffee, selling espresso machines, and running a large company that makes espresso machines, Joe never lost his love for creating and enjoying a great cup of coffee. He semi-retired in Langley on beautiful acreage complete with flower and vegetable gardens, and two donkeys - one of which looks just like Eeyore! - and brings his coffee making expertise to Whidbey Island.

We asked Joe a series of questions about himself & Foxglove Farm. Read on to learn more about one of your local producers!

Why coffee roasting? 

“After a 40 year career in the coffee industry, I have deep love for the product and all of the steps leading up to that perfect cup of coffee.” says Joe. He knows his way around sourcing the green beans from different countries, creating roasts, and sharing that great cup of coffee with others. 

Foxglove coffee is sourced from sustainable farmers in various coffee growing regions around the globe and fresh roasted. When Joe says fresh, he means it: his micro-batches are roasted to order.

Favorite coffee right now?

My current favorite coffee is a microlot from Uganda, which I enjoy 2 cups of every morning. Usually with a breakfast of fresh eggs from my chickens and an avocado.

Community involvement:

I’m just starting my 4th year of living here in semi-retirement. I have enjoyed developing a network of like minded people and friends. We shop for our food locally at Farmers Market and recently started getting a CSA subscription from the Organic Farm School. My goal is to provide the community with a style and origins of coffees not otherwise available here locally.
